For more than 40 years, Jim Kallas has been a leader in hospitality in various roles. He is the CEO of Calumet Hospitality and the President of Maverick Hotels and Restaurants. Mr. Kallas’ career includes 30 years with Compass Group—20 years as Division President— a leading food service and support services company. He was a two-term chairman of the Illinois Restaurant Association and continues to serve on the finance ad government relations committee. In 2017, Mayor Rahm Emmanuel proclaimed March 1st “Jim Kallas Day” in recognition of his leadership in the hospitality industry.
